House of Prime Rib. This place is a San Francisco landmark. The original House of Prime Rib opened in 1949 and has been serving the best beef available - the top 2% of of all beef marketed to be exact.
What exactly is prime rib? The actual nomenclature is standing rib roast, a cut from the primal rib section of the beef. The entire rib section is comprised of anywhere from six to twelve ribs; a standing rib can comprise anywhere from two to seven ribs. Your typical ribeye steak would result from removing the bones and and most of the fat and muscles. Also, only beef that is graded prime by the USDA can be called prime rib. Otherwise, restaurants would have to call it standing rib roast which just doesn't sound very appetizing.
Joe Betz is the longtime owner of House of Prime Rib and has an amazing story of his own. When the restaurant first opened in 1949, Betz was living in his native Germany bouncing between boarding school and foster care. He set out on his own at the age of 14 where he entered the restaurant industry as a waiter. He landed in the US at the age of 20 and landed a job as a waiter at a place called Hoffman Grill which he would later buy. Betz took over the House of Prime Rib in 1985 when the restaurant was serving 75 dinners a night. Today, an average night is 500.
My best friend and old college roommate lives in San Francisco and we have our ritual dinner at House of Prime Rib whenever I visit.
We waited until the last minute to make reservations and it wasn't a surprise that they had zero tables available. We took our chances and went without a reservation - typical wait is 2 hours without a reservation. Killin' some time over a glass of wine and trail mix.
We finally got seated after about a 90 minute wait.
Not much to think about. All they serve is prime rib. Just select your cut. I went with the House Cut.
Included with your meal is salad, your choice of mashed or baked, Yorkshire pudding, and creamed spinach.
Brought this bottle ourselves. Have a thick skin now and I'll corkage if I want to!

And comes the Yorkshire Pudding. Pudding was nothing exciting but let it soak the juices when you are done with your meat and it's a great balance of salty and sweet.
