Let me introduce you to one of our favorite Korean BBQ restaurants. It's a very unique, hold-in-the-wall restaurant that specializes in 돼지 특수부위 (Special Cuts of Pork).
Ok so some of the cuts sold here are 갈매기살 (Skirt), 모소리 also known as 항정살 (Pork Shoulder Butt), and 가오리 (I actually don't know what part this is). Then they also have 이겹살 (Two-layer Pork Belly) which is unique because most restaurants serve 삼겹살 (Three-layer Pork Belly) or 오겹살 (Five-layer Pork Belly).
We always order the 모소리 (Pork Shoulder Butt) but they ran out of that cut so we ordered a serving of 가오리 and 갈매기 (Skirt).
Their signature grill. Love this thing. The restaurant recently expanded into another building but this grill is only available in the original restaurant. The expanded area has a regular metal grill and you don't want that. You want this grill.

Because it always leads to this.
The price you pay for this grill is air conditioning... or the lack there of. No A/C in the original restaurant area. But they do give you this half frozen hand towel to put around your neck.
Or in my case, on your face.
The garlic chives on the right goes really well with the meat. Or just alone as a side dish. I usually kill about four-five bowls of these garlic chives.
Very very basic side dishes. I guess you don't need to spend money/time on that when you have confidence in your meat.
갈매기살 (Skirt)

She threw in couple pieces of 이겹살 (Two-layer Pork Belly)
I ordered a serving of 껍질 (Pork Skin) and she gave us this on the house instead.
Let's start with the 가오리. I'm inclined to say this is the cut between the shoulder and the neck with the fat coming from the neck area and the lean meat coming from the shoulder.
For anyone that hasn't tried pork skin, I'm tellin' ya - you're missing out. Try it. It's not a unique thing to Korea. Hawaiians love the skin on their whole suckling pig, so do the Spaniards with their cochinillo.
미숫가루 (Mi Soot Garoo - Ground Mixed Grains)
I particularly don't like this combo but it's a standard thing in Korea like PB&J.
Refill.
On to the 갈매기 (Skirt)

So we promised ourselves to end the dinner at 2 servings. That plan didn't go too well. Ordered a serving of 이겹살 (Two-layer Pork Belly)
Even portions of fat to lean meat ratio. Definitely will lead to a two-layer belly for yourself.
An order of 된장국 (Soybean Paste Soup). Most people order the 내장탕 (Intestine Soup). While I can handle my own when it comes to intestines, I've tried that soup before and it was way too intense for me.
Christine liked the pork skin so I ordered a serving but the owner hooked us up again.
One last bowl of chives.
The owner. She's the daughter of the original owners and took over the operations here. Think she's about my age or even younger. Really cool gal. Very generous with the meat.
